THE FARM “TERRE DEL FAVONIO”

SUN, SEA, LAND, SALT, SKY, WIND,
PASSION, SWEAT, SMILES, HEARTS AND HANDS TOGETHER

Respect for nature and the land, a commitment to cultivating the soil, and a careful approach

to farming and its produce lie at the heart of Terre del Favonio.

OUR WHEAT IS STONE-MILLED,

preserving all its nutritional properties.

OUR HENS, FREE TO ROAM OUTDOORS,

provide us with fresh eggs daily.

OUR SICILIAN BLACK BEES

produce wildflower, thyme, and thistle honey, depending on the seasonal blooms.

THE FRUITS OF OUR LAND

Our olive trees overlook the sea, with 2,500 trees of the typical cultivars of the Trapani area: Biancolilla, Cerasuola, and Nocellara. We hand-pick the olives early, transport them in small crates, and mill them within a few hours at our on-site oil mill. This care allows us to produce high-quality olive oil, preserving the fragrances and aromas of our land.
On our arable land, we cultivate ancient Sicilian durum wheat varieties – Margarito, Perciasacchi, Russello, and Tumminia – which we use to produce flours and our wholegrain Busiate, a traditional pasta from Trapani.

Our sea-facing vineyard consists of 82 rows of native grape varieties: Grillo, Catarratto, and Frappato. In the cellar, we follow the natural rhythms of the grapes, allowing spontaneous fermentations with indigenous yeasts. This lets the wines freely express the unique character of the land.
Figs, prickly pears, almonds, and pomegranates grow on our terraced fields, among ancient olive and carob trees.

Our garden produces a wide variety of vegetables: cherry tomatoes, eggplants, peppers, zucchinis, pumpkins, red onions, salads, and aromatic herbs.
In our fields, wild plants, precious allies of the ecosystem’s balance, grow freely and complete their lifecycle by flowering and producing seeds and fruits. They are mowed once dry and continue to protect and enrich the soil as they decompose.
Nature rewards us with wonderful fruits and abundance when it is left to work peacefully, without human interference, free to find its own balance.
